with onion and rock samphire

Ingredients
300 gr yellow split peas
1 onion
1 clove of garlic
1 carrot
2-3 bay leaves
1 tsp. salt
½ tsp. pepper
1 liter boiled water
For serving
Olive oil
1 onion
Rock samphire

Method
• Soak the yellow split peas for about an hour, rinse and drain
• Cut the onion, garlic and carrot into thin slices and sauté with some oil in a saucepan. Add the bay leaves and cook for 2-3 minutes
• Add the split peas, boiled water, salt and pepper and cook over low heat for 20 minutes until the split peas are cooked and most of the water is absorbed
• Remove from heat and discard the bay leaves
• Use a hand blender to puree the split peas into a smooth consistency. You can also use any kind of blender or food processor.
For serving
• Cut the onion into slices and cook it in a pan with some oil
• Serve fava in a deep dish with freshly ground pepper, olive oil, the cooked onions and rock samphire on top
