Italian Style Burger

with cashew mozzarella

Ingredients

 

  • 4 burger buns

  • Some rocket leaves

  • Tomato slices

  • 4 tbsp pesto sauce

  • 12 frozen onion rings

 

For the burger patties

  • 2 x 400 gr red kidney beans cans, rinsed and drained

  • 1 small carrot

  • 1 onion

  • 1 garlic clove

  • ½ cup parsley

  • ½ cup oats

  • 1 tbsp olive oil

  • Salt, cumin and paprika (½ tbsp each)

  • Dried oregano, basil and thyme (1 tsp each)

  • ½ tsp pepper

 

For the cashew mozzarella

  • 1 cup cashews

  • 2 cups water

  • 1 tbsp lime juice

  • 1½ tbsp maize starch

  • 1 tbsp nutritional yeast

  • ½ tbsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp pepper

Method

For the burger patties

  • Place the beans in a bowl and mash them using a fork

  • Grate the carrot and chop the onion, the garlic and the parsley

  • Use a blender or a food processor to pulse the oats until they look like flour (a few seconds are enough)

  • Add everything into the bowl and combine with the mashed beans. Add the rest of the ingredients (olive oil, salt, pepper, cumin, paprika, oregano, basil and thyme) and scrunch the mixture with your hands until well combined

  • Place in the fridge to chill for 15 minutes (or more)

  • Form 4 patties and put them on a baking pan layered with parchment paper and and bake them at 180⁰C in a preheated oven for 45 minutes or until firm

 

For the cashew mozzarella

  • Add all ingredients into a blender and blend until completely smooth.

  • Pour  into a saucepan over medium heat and cook while stirring constantly until thick (this takes about 5 minutes

  • Set aside

For the onion rings

  • Just place them into the oven and bake for 15 minutes flipping halfway (or follow packaging instructions)

 

Assembling the burger

  • Place a few rocket leaves on the bottom half of the bun. Top with the tomato slices, the pesto sauce and the bean burger patty. Continue with the cashew mozzarella and the onion rings (3 for each burger).  Top with the other half bun.

  • Serve with French fries or oven baked potatoes
