Mini pasta salad bowls with pesto

15 mini bowls (depends on the size) or one big bowl

Ingredients

 

  • 250 gr penne

  • Salt

  • 1 cup frozen corn

  • ½ cup sundried tomatoes sliced

  • 2 tomatoes cut into cubes

  • 2 cups arugula

  • 4 tbsp vegan pesto

Method

  • Bring a large pot of water to a boil. Add some salt and cook pasta in boiling water according to the recommended time printed on the packaging. Add the frozen corn to the boiling water during the last minute of cooking.

  • Drain and let cool.

  • In a big bowl mix pasta and corn with the rest of the ingredients and serve into mini bowls.
