Easter Flaounes

Ingredients

For the dough

  • 400 gr. strong flour

  • 30 gr. olive oil

  • ½ sachet yeast (4 gr.)

  • 200 gr. water

  • A pinch of salt

 

For the filling

  • 500 gr. various kinds of grated cheeses (here I used, mozzarella, parmesan and smoked gouda)

  • 3 tbsp nutritional yeast

  • 1 tsp salt

  • 1/2 tsp mahlepi

  • 1/2 tsp mastic

  • 1/4 tsp cinnamon

  • 1/2 cup mint, finely chopped

  • 2 tablespoons ground flaxseeds

  • 2 ½ cups all-purpose flour

  • 3 tsp baking powder

  • ½  cup plant milk

  • Sesame seeds

Method

For the dough

  • Activate the yeast in a small amount of the water you will use

  • Pour all the ingredients of the dough into a bowl, mix and knead for a few minutes

  • Cover the bowl with a clean towel and leave it for an hour to rise

For the filling

  • Put the flaxseeds in a small bowl and add 4 tablespoons of water. Set aside for 5 minutes to thicken.

  • Mix the cheeses, nutritional yeast, salt, mahlepi, mastic, cinnamon, mint and the flaxseed mixture in a big bowl

  • Add the flour and baking powder and mix well

  • Add the milk and knead until you have a firm mixture

 

Making the flaounes

  • Divide the dough and the filling into four or eight equal parts

  • On a floured surface roll out one piece of dough, trying to create a square or triangle shape

  • Place a piece of filling in the center and fold the dough to cover the filling, leaving a small piece of it uncovered

  • Press the edges with a fork, sprinkle with sesame seeds and transfer in a baking pan lined with parchment paper

  • Continue with the rest of the pieces

  • Bake in a preheated oven for 40 minutes or until golden brown

  • Allow to cool before cutting them

 

Notes

If you don't have flaxseeds, you can use chia seeds instead or skip it completely

If you want your flaounes to have sesame seeds on the bottom, mix in a plate some sesame seeds with a tiny amount of water and each time you roll out a piece of dough place it on the sesame seeds and press lightly to stick.
